Creamy Fruit Salad

                Delicious fruit salad with milk and fresh cream.


1 cup milk
1/2 cup milk powder
1/2 cup fresh cream
1/4 cup sugar
1/2 tsp vanilla essence
chopped fruits (of your choice, here I used mangoes, apples, grapes, pineapple, strawberries and  banana)
dry fruits

  1. In a bowl, mix milk, milk powder, fresh cream, sugar and vanilla essence and whisk it till sugar dissolves. Keep it in the fridge. 
  2. Mix chopped fruits with little sugar.
  3. When ready to serve,combine the chilled  milk mixture (step 1) with chopped fruits (step 2) in a serving bowl/glass and garnish it with cherries or dry fruits ...

Chilli Chicken

                Recipe,thanks to my dear friend Thahseen from USA.


400 gms boneless chicken, cut into small pieces
5-8 green chillies,chopped
2 1/2 tbsp cornflour
1/2 tsp black peppercorns, crushed
1 egg
2 tbsp dark soy sauce
8-10 garlic cloves, chopped
2 medium onion, chopped
2 medium green capsicums, seeded cut into thick strips
2 tbsp red chilli sauce
1 cup chicken stock
2 tbsp vinegar
salt to taste

  1. Take chicken pieces in a bowl. Add half the cornflour, salt, crushed black peppercorns, egg  and mix.
  2. Add a little dark soy sauce and mix.
  3. Heat sufficient oil in a pan and deep fry the chicken pieces till golden. Take care not to overcook. Drain and keep aside.
  4. Heat oil in another pan and add garlic and saute for half a minute. Add green chillies and continue to saute.
  5. Then add onion, green capsicums and saute.Stir in the remaining dark soy sauce and red chilli sauce.
  6. Add a little chicken stock and bring the mixture to a boil. Then add fried chicken pieces to the pan and toss.
  7.  Blend the remaining cornflour in a little stock. Add this blended cornflour to the pan and mix.Check salt and cook for a minute. Add vinegar and stir. The starter is ready.
  8. If we want to make it a gravy, add some more stock and let it come to a boil and then serve hot.

Kovakka Stir Fry (Ivy Gourd Stir fry)


250 gm kovakka / ivy gourd
1 onion chopped
1 tsp chilly powder
1/4 tsp turmeric powder
curry leaves

  1. Cut kovakka into thin round pieces and keep aside.
  2. Heat oil in a pan ,add chopped onion and curry leaves and saute till the onion is soft.
  3. Then add chopped kovakka, chilly powder , turmeric powder and salt and mix well.
  4. Cover and cook  for few minutes, stirring occasionally.
  5. Uncover and stir fry until dry.Serve with rice.

Chicken,Sweet Corn and Vegetable Soup


250 gm chicken pieces
1 tin sweet corn
2 tbsp carrot, finely chopped
2 tbsp beans, finely chopped
1/2- 1 tsp pepper powder
2-3 tbsp cornflour
6 cups of water
egg white of 1 egg

  1. Cook chicken with 6 cups of water in a cooker with salt and pepper powder. 
  2. Take out the chicken pieces from the cooker, shred it and  keep aside.
  3. Pour the chicken stock from the cooker into a pan. Now add sweet corn, carrot and beans into it and boil them for few minutes.
  4. Then add the shredded chicken and mix well.
  5. Mix cornflour with little water and add that to boiling stock and boil for few minutes.
  6. Now, slowly add the egg white and keep stirring continuously with spoon or fork until it forms like fine threads.  You can also pour the egg white slowly through the strainer. Check the salt.Switch off the flame and serve hot.

Rava Upma (Semolina Upma)

                        Easy to prepare and healthy breakfast...


1 cup roasted rava (semolina)
1 small onion chopped 
1/4 tsp chopped ginger
1/2 tsp chopped green chilly
1 finely chopped carrot
curry leaves
2 cup water
1 tsp mustard seeds
1 tsp urad dal (black gram dal)

  1. Heat oil/ghee in a pan ,splutter mustard seeds and fry urad dal till brown.
  2. Add onion, ginger, green chilly and curry leaves and then saute for few minutes.
  3. Now add the finely chopped carrot ,mix well and fry for 1-2 minutes.
  4. Then add  water and required salt .When the water starts boiling, add 1 cup roasted rava to it with constant stirring  and cook for 2 minutes. Serve hot.

Chicken Stew


500 gm chicken
3 big onion, thinly sliced
1 tsp ginger, finely chopped
1 tsp garlic, finely chopped
4-5 green chillies
1 carrot chopped into small pieces
4-5 small pieces of cinnamon
4 cloves
2 cardamons
7 whole black pepper
1 3/4 -2 cup thin coconut milk
1 cup thick coconut milk
1/4 tsp garam masala
1/2 tsp pepper powder
1 tbsp chopped coriander leaves
curry leaves

  1. Heat oil in a pressure cooker, add ginger and garlic and fry it till the raw smell disappear.
  2. Now add onion and saute it for few minutes. When it becomes soft, add green chillies,carrot, cloves,cardamon,cinnamon,whole pepper and curry leaves and saute well.
  3. Add chicken , salt and mix well
  4. Then, pour thin coconut milk, mix well and pressure cook until done.
  5.  Now open the cooker and add thick coconut milk, garam masala, pepper powder and chopped coriander leaves and simmer for few minutes. Adjust salt. When it is about to boil,switch off and serve hot with appam , idiyappam ,ghee rice etc...

Chilli Mushroom


250 gm mushroom
1 egg
1 tsp pepper powder
4 tbsp plain flour ( maida)
2 big onion, finely chopped
3 green chilly, chopped into small pieces
1/2 tsp ginger-garlic paste
1 small capsicum
few curry leaves
1 tsp soy sauce
1-2 tsp chilli sauce
2 tsp cornflour
2 -2 1/2 tsp tomato sauce
red colour (optional)
1 cup stock
1/2 tsp sugar

  1. First step is to prepare the stock. For this we need to cook 2 or 3 mushrooms and 1 tbsp finely chopped onion by adding 1 cup of water and pepper powder in a pressure cooker  for 2 whistle.
  2.  Cut each mushroom into two pieces and marinate it with pepper powder and salt for 30 minutes.
  3.  Add egg and plain flour into the marinated mushroom and mix well.
  4.  Heat oil in a pan and  deep fry the marinated mushroom  till golden brown and keep aside.
  5. Heat oil in another  pan and saute chopped onion, green chillies, ginger-garlic paste, capsicum and curry leaves.
  6. Add stock from step (1) to step (5). When it boils, stir in sugar, chilli sauce,tomato sauce and soy sauce, mix well. 
  7. Make a paste of cornflour by adding little water .Now add this paste to the pan and boil. Adjust the salt.
  8. When the gravy starts thickening, add fried mushroom (from step 4) and mix well.Switch off the flame when the gravy reaches the required thickness. Serve hot.

Kums / Mutta Pola

                                 ' Kums' is a soft and spongy textured cake prepared using eggs and plain flour with cardamon flavour. It is very popular in  Malabar area.Can be served as a tea-time snack.
My brother Sabi's favourite.


4 eggs
9-10 tbsp sugar 
8 tbsp plain flour (maida)
1/2 tsp cardamon powder
ghee for greasing the pan

  1. In a bowl, beat together eggs, sugar and cardamon powder on high speed for about 10-15 minutes.
  2. Then add plain flour into it and mix together without any lumps.
  3. Grease a deep bottomed non stick pan with ghee, pour the mixture, cover and cook in low flame for about 15-20 minutes or when the knife or fork  inserted in the center comes out clean. Switch off the flame.
  4. Heat another frying pan,grease with little ghee and turn the cake upside down into this pan and cook for another 5 minutes. Cut and serve with tea.

Silverbeet Thoran (Stir fry)

                              Silverbeet is one of the easily available vegetable in New Zealand. It is available in both red and green stems. In other places it is called Swiss Chard.


1 bunch silverbeet, finely chopped
1/4 cup grated coconut
2 cloves garlic crushed or chopped
1 onion chopped
4-5 green chillies chopped
1 tsp mustard
few curry leaves

  1. Heat oil in a pan and splutter mustard seeds.
  2. Add curry leaves, garlic, onion , green chilles and saute. Then add chopped silverbeet and stir for few minutes.
  3. Add the grated coconut and salt,stir and cook it covered on a low-medium flame for 5 minutes.Uncover and stir fry until dry.Serve with rice.

Avocado Shake

                      A refreshing and healthy drink for a warm day.


1 ripe avocado
1 cup chilled milk
1/4 cup crushed ice
3-4 tbsp sugar (or more,depending on your taste)
1/2 -1 tsp vanilla essence (or 2 scoop of ice cream)

  1. Cut avocado into half and scoop out the flesh.
  2. Blend this with crushed ice, sugar and vanilla essence to a smooth paste.
  3. Then add chilled milk into it and blend it for few seconds.
  4. Pour into a tall glass and decorate as you like.

Stuffed Tomatoes

                       This is an impressive dinner-party dish which can be served as a starter. Large and firm tomatoes are used to fill the minced meat filling.

5-6 large,firm tomatoes
40-50 g unsalted butter
1 medium onion, finely chopped
1 tsp fresh ginger , finely chopped
1 tsp fresh garlic, crushed
1 tsp pepper
1/2-1 tsp garam masala
450 g/ 1 lb minced meat (I used minced chicken here,can use minced lamb or minced beef)
1-2 green chillies
fresh coriander leaves

  1. Preheat the oven to 180 degree celsius. Rinse the tomatoes, cut off the tops and scoop out the flesh.
  2. Grease a heatproof dish with butter. Place the tomatoes in the dish.
  3. Heat the oil in a pan and fry the onion until golden brown.
  4. Lower the heat and add the ginger, garlic, pepper, salt and garam masala. Stir-fry the mixture for 3-5 min.
  5. Add the minced meat to the saucepan and fry 10-15 min.
  6. Add the green chilli and fresh coriander leaves and continue stir-frying the mixture for 3-5 min.
  7. Spoon the meat mixture into the tomatoes and replace the tops. Cook the tomatoes in the oven for 15-20 min.
  8. Transfer the tomatoes to serving plates and serve hot.

Jelly Belly Ice cream

                           Jelly Belly Ice cream is a homemade vanilla ice cream served with strawberry jelly. An ideal dish as a dessert.


1 cup strawberry jelly
1 cup milk
1 cup milk powder
1 cup fresh cream
1/2 cup sugar
1/2 tsp vanilla essence

  1. Place the strawberry jelly crystals in a pan,add 1 cup water and heat stirring till the crystals dissolve. When the mixture boils,take it off the heat and set aside to cool.
  2. Take a freezer safe tray and fill half with jelly mixture and place in refrigerator till set.
  3. To make the ice cream, mix together milk,milk powder, fresh cream,sugar and vanilla essence in a bowl and whisk till sugar dissolves.
  4. Pour the mixture on top of the set jelly till the tray is filled,and place it in the freezer till set. Cut the prepared jelly ice cream into desired shape and serve.

Uzhunnu Vada

               Crispy Uzhunnu vada is a perfect snack for evening tea. It is also a popular South Indian breakfast dish,usually served  with coconut chutney.

     2 cup urad dal, soaked in water for 5-6 hrs
     1 finely chopped onion
     3 green chillies, chopped
     small piece ginger, finely chopped
     few curry leaves, chopped
     3/4-1 tsp pepper
     1-2 tbsp rice powder
     oil for frying

  1. Grind urad dal with salt by adding few drops of water into thick batter.
  2. Transfer it into a bowl and add onion, green chillies, ginger, curry leaves,pepper and rice powder and mix well.
  3. Heat oil in a pan in medium flame.
  4. Wet your palms with water, take little batter and make a ball. Place it on the palm, flatten it and make a hole in the centre.
  5. Drop this slowly in the hot oil and fry till golden brown.Serve this with chutney.

Broccoli Stir Fry

                          Today's post is a simple broccoli stir fry, which is a quick and easy 'side dish' for rice. Broccoli is a healthy vegetable which even kids love to eat.


1 broccoli
1 medium onion,chopped
3 cloves garlic,crushed
1/4 tsp turmeric powder
1-2 tsp chilly powder
salt to taste

  1.  Wash and cut broccoli into small florets.
  2.  Heat oil in a pan,add crushed garlic,chopped onion and saute till the onion is soft.
  3. Stir in chopped broccoli,chilly powder,turmeric powder and salt.Cover and cook it on low flame until broccoli is cooked, stirring occasionally.
  4. Open lid and stir fry until dry.

Strawberry Banana Muffins

                   Starting my blog with strawberry banana muffin which is prepared by using fresh strawberries and ripe bananas.This recipe is adapted from Joy of Baking.


1 cup fresh strawberries ,cut into bite sized pieces
2 large ripe bananas,mashed
2 large eggs,lightly beaten
1/2 cup (113 gms) unsalted butter,melted
1 tsp vanilla extract
2 1/4 cup all purpose flour
3/4 cup light brown sugar
1 1/2 tsp baking powder
1/4 tsp baking soda
1 tsp ground cinnamon
1/2 tsp salt

  1. Set oven to 177 degree celsius and preheat it. Line a 12 cup muffin pan with paper liners or  lightly butter the muffin cups.
  2. In  a bowl,whisk together eggs,vanilla extract and mashed banana. Then add melted butter  and stir  to combine.
  3. In another large bowl,combine flour,sugar,baking powder,baking soda,cinnamon and salt.Gently fold in strawberries, making sure they are coated with flour,which helps to prevent the strawberries from sink.
  4. Add content of step (2) into step (3) and stir only until the ingredients are just combined. Do not over mix the batter.
  5.  Using spoon or ice cream scoop divide batter among 12 muffin cups,and bake for 20-25 minutes or until a tester inserted in the center of muffin comes out clean.
