Silverbeet Thoran (Stir fry)

                              Silverbeet is one of the easily available vegetable in New Zealand. It is available in both red and green stems. In other places it is called Swiss Chard.


1 bunch silverbeet, finely chopped
1/4 cup grated coconut
2 cloves garlic crushed or chopped
1 onion chopped
4-5 green chillies chopped
1 tsp mustard
few curry leaves

  1. Heat oil in a pan and splutter mustard seeds.
  2. Add curry leaves, garlic, onion , green chilles and saute. Then add chopped silverbeet and stir for few minutes.
  3. Add the grated coconut and salt,stir and cook it covered on a low-medium flame for 5 minutes.Uncover and stir fry until dry.Serve with rice.
