Beetroot Thoran




Ingredients:

1 large beetroot ,finely chopped
2 shallots,thinly sliced
2-3 green chillies,slit
1/4 cup grated coconut
curry leaves
1/2 tsp mustard seeds
oil
salt

Preparation:
  1. Peel the beetroot and chop it into small pieces.
  2. Heat oil in a pan and splutter mustard seeds.
  3. Add curry leaves, finely chopped beetroot, shallots, green chillies and salt and stir well.
  4. Cover and cook for about 10 minutes.
  5. Then add the grated coconut, mix well and cook it covered in low flame until the beetroot is fully cooked and dry. Serve with rice.
