Egg Stew


Ingredients:

3 hard boiled eggs, cut each into half
2 onions, finely chopped
3 green chillies, slit
1 tomato, chopped
2 sprigs curry leaves
1 tbsp coriander leaves, chopped
1 tsp coriander powder
1/4 tsp turmeric powder
1/4 tsp garam masala
1/2 tsp pepper powder
1-1 1/2  cup coconut milk
1 tbsp oil
salt

Preparation:
  1. Heat oil in a pan, add chopped onions, green chillies, tomato and curry leaves and saute well.
  2. Add coriander powder, turmeric powder, salt and 1/2- 3/4 cup water and cook for few minutes.
  3. Add coconut milk, garam masala, pepper powder and coriander leaves, mix well and bring to boil.
  4. Add boiled eggs and cook for 1-2 minutes. Remove from fire and serve hot...

    1. Thanks for your comment...I used canned coconut milk for this, it is difficult to get fresh coconuts here :)
