Nurapathiri/ Norapathiri


             Nura / Nora means ' foam' in Malayalam. This pathiri is prepared by using the foam from the ground batter. This is usually served with spicy curry....

Ingredients:

1 cup kaima rice/ jeerakasala rice/ basmati rice
2 cup coconut milk
2 eggs
salt

Preparation:
  1. Soak the rice in water for 2-3 hours.
  2. Grind rice with coconut milk, eggs and salt to a smooth batter. No need to add water while grinding.
  3. Then beat the batter using a beater till foam appears.

     4. Heat a non stick pan and pour a ladleful of foam from the above batter to the pan and rotate the pan to spread the batter on all sides of the pan.



        5. Cook it till done and transfer to a plate.
        6. Beat again the batter and pour another ladleful of the foam. Repeat the same process with the remaining batter.
        7. Serve it hot with any spicy curry of your choice........

Sesame Fried Chicken Lollipop


Ingredients:

10 chicken lollipops (5 chicken wings)
1 tsp garlic paste
1-2 tbsp lime juice
1 tbsp chilli powder
1 egg
1-2 tbsp corn flour
2 tbsp white sesame seeds
1 tbsp black sesame seeds
salt
oil for frying

Preparation:
  1. Take chicken wings and convert them into chicken lollipops. (Check this link )
  2. In a bowl, add the cleaned chicken lollipops, garlic paste, lime juice, chilli powder and salt and mix well. Keep it aside for 10-15 minutes.
  3. In another bowl, beat egg with a spoon. Add corn flour and salt and make a batter.
  4. Place white and black sesame seeds in a plate.
  5. Dip each marinated chicken lollipops in the batter and roll out in the sesame seeds.
  6. Heat oil in a pan and deep fry them until golden brown. Wrap aluminium foil at the ends and serve hot...

Squid/ Koonthal Ada


Ingredients:

2 cup cleaned squids, chopped
2 tsp chilli powder
1/2 tsp turmeric powder
1/2 cup onion, finely chopped
1 tsp green chillies, crushed
1 tsp garlic, crushed
1 tsp ginger, crushed
1/2 cup tomato, finely chopped
2 cup rice flour/ pathiri podi
2 cup water
1/2 cup grated coconut
1 tsp fennel seeds
2 sprig curry leaves
salt
oil
banana leaves/ parchment paper

Preparation:
  1. Marinate cleaned squids with chilli powder, turmeric powder and salt.
  2. Heat oil in a pan and add chopped onions, green chillies, garlic, ginger and tomato and saute well.
  3. Add marinated squids ,water (1/2-1 cup) , curry leaves and salt. Cover and cook till done and remove from flame when water completely dries up..Keep it aside..
  4. Crush grated coconut and fennel seeds together without adding water and keep it aside.
  5. Boil 2 cup water adding salt. Add rice flour/ pathiri podi and mix well.
  6. Add crushed coconut mixture, mix well and make a smooth dough.

    7. Divide the dough into small balls and flatten each ball in banana leaf/ parchment paper.
    8. Add prepared squid masala on one side and gently fold over the other side and seal the edges (like adas..)..



     9. Repeat with the remaining dough and squid masala. Place them in a steamer and steam cook for 15-20 minutes..Serve hot...

Mussels/ Kallummakaya Arivada


Ingredients:

20-25 mussels, cleaned
2 cups rice flour
1 cup grated coconut
1/2 cup onion, finely chopped
4 green chillies, finely chopped
2 sprig curry leaves, chopped
1 tsp fennel seeds
1/4 tsp cumin seeds
1/2 tsp turmeric powder
2 tbsp chilli powder
1 tsp plain flour
salt
oil

Preparation:
  1. Grind grated coconut, chopped onion, fennel seeds and cumin seeds to a coarse paste.
  2. In a bowl, add rice flour and salt. Add ground coconut mixture, mix well and make a dough adding enough hot water (about 1 1/2-2 cups).
  3. Add chopped green chillies and curry leaves and mix well.
  4. Chop cleaned mussels into small pieces and mix well with the dough.


       5. Make small balls out of the dough and flatten it like vada..Place them in a steamer and steam cook till done ( 15-20 minutes).


       6. In a bowl, mix chilli powder, turmeric powder, plain flour and salt adding 1/4 cup water and make a paste.
       7. Heat oil in a pan and dip the steamed vadas in the paste and fry it till golden. Serve as a snack...

Apple Milkshake


Ingredients:

2 apples, peeled and chopped
3 cup chilled milk
1-2 tbsp sugar (adjust to your taste)
2 scoop vanilla ice cream (optional)

Preparation:
  1. In a blender, add chopped apples, chilled milk , sugar and vanilla ice cream and blend it well until smooth.
  2. Pour into glasses and serve immediately.....

Crispy Chicken and Cheese


                                        Wishing all my readers a Blessed Ramadan....

Ingredients:

200 gm cheese, cut into 1/2 inch cubes
2 boneless chicken breasts, cut into 1/2 inch cubes
4 garlic cloves, finely chopped
1/4 tsp crushed black pepper
1 tbsp coriander leaves, chopped
2 tsp lemon juice
1 egg , beaten
1 tbsp tomato sauce/ ketchup
salt
1 cup bread crumbs
oil for frying

Preparation:
  1. In a bowl, add chicken cubes, chopped garlic, crushed pepper, salt, coriander leaves, lemon juice, 1 beaten egg , tomato sauce and mix well and marinate for half an hour.
  2. Take toothpicks and thread each with chicken cube, followed by cheese cube and then chicken cube.
  3. Roll them in the bread crumbs and then dip them in the remaining marinade and roll them again in the bread crumbs to double coat. 
  4. Heat oil in a pan and deep fry them in the hot oil till golden and crispy....
  5. To make sauce, mix 6 tbsp mayonnaise and 3 tbsp tomato sauce in a bowl..Serve hot with sauce....

Prawns - Cauliflower Biriyani


Ingredients:

1/2 kg prawns, cleaned
1 small cauliflower, thinly sliced
4-5 onions, sliced
1 1/2 tbsp ginger- garlic paste
5-6 green chillies,crushed
2 big tomatoes, chopped
2 tsp chilli powder
1 tsp turmeric powder
1 tsp garam masala
1/4 cup mint leaves
1/4 cup coriander leaves
2 cup basmati rice
3 cups water
3 cloves
3 cardamoms
2 piece cinnamon
1 tbsp lemon juice
ghee
oil for frying
salt

Preparation:

For Preparing Rice:
  1. Wash and drain the rice. Boil the water and keep it aside.
  2. Heat ghee in a thick bottomed panadd cardamom, cinnamon, cloves and 1 sliced onion and saute till transparent.
  3. Add drained rice and saute for 4-5 minutes in a medium flame. Add boiled water and salt, cover and cook till rice is done.
For Preparing Prawns- Cauliflower Masala:
  1. In a bowl, marinate cleaned prawns with  1 tsp chilli powder, 1/2 tsp turmeric powder and salt. Heat oil in a pan and fry it and keep it aside.
  2. In another bowl, add sliced cauliflower, 1 tsp chilli powder, 1/2 tsp turmeric powder and salt and mix well. Fry it in the same oil (used for frying prawns) till done and keep it aside.
  3. Heat a thick bottomed pan, add little oil ( used for frying) and add sliced onions and saute till transparent.
  4. Add ginger-garlic paste and crushed green chillies and saute well.
  5. Add chopped tomatoes, salt, mint leaves, coriander leaves and mix well.
  6. Then add fried prawns and cauliflowers and mix well.
  7. Add 1/2 tsp garam masala and 1 tbsp lemon juice and mix well...
For Layering:
  1. Add cooked rice on top of the prepared prawns- cauliflower masala. 
  2. Mix little yellow food color with lemon juice and sprinkle over the rice. Add 1/2 tsp garam masala, 1 tbsp ghee, coriander leaves and mint leaves.
  3. Close with a tight lid and cook on low flame for 10-15 minutes. Garnish with coriander leaves and serve hot.....

Watermelon- Tomato Salad


Ingredients:

3-4 small tomatoes
1 cup seedless watermelon
1 small cucumber
1/2 tbsp coriander leaves, chopped
1-2 tbsp olive oil
1 1/2- 2 tbsp vinegar
crushed pepper
salt

Preparation:
  1. Cut tomatoes and cucumber into small cubes. Using a melon baller, scoop out watermelon or cut it into small cubes.
  2. In a bowl, add cubed tomatoes, cucumber, watermelon and coriander leaves and mix well.
  3. Mix olive oil, vinegar, crushed pepper and salt together in a small bowl and add to the chopped ingredients (step 2) and mix well. Transfer to a plate and serve.....

M & M Cookies


Ingredients:

2 cup plain flour
1 1/4 tsp baking soda
1/4 tsp salt
2/3 cup granulated white sugar
2/3 cup light brown sugar
3/4 cup (170 gm) unsalted butter, room temperature
1 large egg
1 large egg yolk
1 1/2 tsp vanilla essence
1 cup (200 gm) M& M's candies

Preparation:
  1. Preheat oven to 180 degree celcius. Line two baking sheets with parchment paper/ baking paper.
  2. In a bowl, whisk together the plain flour, baking soda and salt.
  3. Beat the butter and sugars in a large bowl until light and fluffy for about 2-3 minutes.
  4. Add egg and egg yolk and beat well. Beat in the vanilla essence.
  5. Gradually add the flour mixture to the creamed mixture and beat just until incorporated. (If batter is soft, cover and refrigerate for 30-60 minutes or until firm).
  6. Using an ice cream scoop or two spoons, form batter into balls and place 6-7 of them in each baking sheet. Gently flatten each ball into round shape.
  7. Place the M&M's candies on top of the cookies and gently press the candies.
  8. Bake the cookies for 15-20 minutes till light golden brown in color. Remove from oven and cool on wire rack...

Chicken Pizza


Ingredients:

For Pizza base:

2 cup plain flour/ maida
2 tsp yeast
1 tsp sugar
1 tbsp olive oil
1 tsp salt

For Pizza Sauce:

4 tbsp tomato paste
1 tbsp oil
2 garlic cloves, chopped
1 tsp dried oregano
1 tsp crushed pepper
salt

For Topping:

1 cup boneless chicken, cooked and shredded
1/2-1 cup tomato, chopped
1/4 cup yellow capsicum, chopped
1/4 cup green capsicum, chopped
1/4 cup red capsicum, chopped
5-6 black olives
1 cup grated cheese

Preparation:

For Pizza Base:
  1. In a bowl, add plain flour, yeast, sugar and salt and knead well to a soft dough adding enough water (or adding warm milk).
  2. Add the olive oil and knead well again and keep covered with a wet cloth for 20-30 minutes. The dough will be doubled in size. 
  3. Once risen, punch it down and roll it out  into a single round base ( or divide the dough into half and roll out each half in rounds of 1/4" thickness).
For Pizza Sauce:
  1.  Heat oil in a pan and saute chopped garlic for a minute.
  2. Add tomato paste, mix well and cook for 2-3 minutes. Add little hot water and make like a paste. Add dried oregano, crushed pepper and salt, mix well and boil for few minutes (5-7 minutes). 
For Baking Pizza:
  1. Grease the pizza pan and transfer the prepared pizza base.
  2.  Spread the pizza sauce and add the chopped capsicums, followed by  the chopped tomatoes.
  3. Then add cooked shredded chicken and sliced black olives. ( You can add any toppings you like..)
  4. Add / sprinkle grated cheese on top ....


    5.  Bake the pizza in a preheated oven at 180 degree celcius for about 15-20 minutes. Cut it with pizza cutter/ knife and serve...

Carrot Raita


Ingredients:

3/4 cup carrot, finely chopped
2 cup thick yoghurt
1/4 tsp sugar
1/4-1/2 tsp salt
1 tbsp oil
1/4 tsp cumin seeds
1/2 tbsp garlic, chopped
1/4 tsp chilli powder

Preparation:
  1. Steam cook the chopped carrots and keep it aside.
  2. In a bowl, beat the yoghurt, sugar and salt together. Add cooked carrot and mix well.
  3. Heat oil in a small pan and splutter cumin seeds. Saute garlic and add chilli powder and remove from flame.
  4. Add this to the carrot- yoghurt mixture and mix slowly with a fork and serve...

Grilled Whole Fish


Ingredients:

1 whole fish, cleaned
1 tbsp red chilli powder
1/4 tsp turmeric powder
1 tsp pepper powder
3-4 garlic cloves
1 tbsp coriander leaves
1 tbsp lemon juice
2-3 tbsp olive oil
salt

Preparation:
  1. Clean and wash the fish and make slits on both sides.
  2. Make a paste of garlic cloves and coriander leaves using little water.
  3. In a bowl,mix together the red chilli powder, pepper powder, turmeric powder, garlic- coriander leaves paste, lemon juice, salt and olive oil.
  4. Add the cleaned fish and apply the prepared marinade over the fish and marinate for 1 hour in the refrigerator.
  5. Preheat the grill over medium heat. Brush the marinated fish with olive oil and grill for about 15-20 minutes on each side, depending on the size of the fish. Remove from grill and serve hot...

Green Peas and Baby Corn Pulao/ Pulav


Ingredients:

2 cups basmati rice
3 cups of water
1 cup fresh green peas
1 cup baby corn, chopped
2 onions, thinly sliced
1 tsp ginger paste
1 tsp garlic paste
6 green chillies, chopped
1/4 tsp turmeric powder
1/4 cup coriander leaves, finely chopped
1/4 cup mint leaves, finely chopped
2  piece cinnamon
4 cloves
4 cardamoms
2 bay leaves
4-5 tbsp ghee
salt

Preparation:
  1. Wash and drain the rice and keep it aside.
  2. Heat ghee in a thick bottomed pan and saute cinnamon, cloves, cardamoms and bay leaves.
  3. Add sliced onions and saute till light brown.
  4. Add ginger paste, garlic paste, green chillies and turmeric powder and saute well till the raw smell disappears.
  5. Then add the drained rice and saute for 5 minutes.
  6. Add the green peas, chopped baby corn, coriander leaves, mint leaves and salt and mix well.
  7. Transfer this to a pressure cooker and add 3 cups of water and mix well . Cover and cook for 2 whistles. Switch off the flame. Open the pressure cooker when the pressure releases or after 10 minutes.
  8. Mix well carefully and transfer to a serving bowl. Garnish with coriander leaves and serve hot...
