Watermelon-Strawberry Lemonade


Ingredients:

4 cups watermelon, chopped into small pieces
1 cup fresh strawberries, chopped into small pieces
1/4 cup lime juice
1/2 cup sugar
3/4-1 cup water

Preparation:
  1. In a blender, add chopped watermelon, strawberries, lime juice, sugar and water and blend well.
  2. Pour it in a serving glass and serve chilled....

Mushroom Manchurian


Ingredients:

1 cup mushrooms, sliced
3 tbsp cornflour
2 tbsp plain flour
1 tsp ginger-garlic paste
3/4 tsp chilli powder
1 tbsp garlic, finely chopped
1/4 cup onion, finely chopped
1 small capsicum, chopped
spring onions, chopped
1/4 tsp soy sauce
1/2 tsp green chilli sauce
2 tbsp tomato sauce
1/2 tsp pepper powder
oil
salt

Preparation:
  1. In a bowl, mix cornflour, plain flour,ginger-garlic paste, chilli powder, salt and little water to a thick paste.
  2. Add sliced mushrooms and marinate it for 15 minutes and then fry it in the oil till crispy and golden brown. Keep it aside.
  3. Heat 1 tbsp oil in a pan and add finely chopped garlic and 1 tbsp white part of spring onions and saute for a minute.
  4. Add finely chopped onions and saute until slightly browned.
  5. Add chopped capsicum and spring onions and saute for 2 minutes.
  6. Then add soy sauce and mix well. Reduce the flame and add green chilli sauce, tomato sauce and salt and mix well.
  7. Add 1/2 tsp cornflour mixed with 2 tbsp water and bring to a boil.
  8. Add fried mushrooms and pepper powder and stir well for 1-2 minutes for the sauce to coat well. 
  9. Garnish with spring onions and serve...

Karikkappam/ Tender Coconut Appam


Ingredients:

2 cups raw rice
1 karikku/ tender coconut
1 tsp sugar
1/4 tsp baking soda
salt

Preparation:
  1. Soak raw rice in water for 4-5 hours.
  2. Grind the rice along with 1- 1 1/2 cup tender coconut pulp and tender coconut water to a dosa consistency batter and keep it aside for 4-5 hours.
  3. Then add baking soda, sugar and salt and mix well. Keep it aside for 30 minutes.
  4. Heat a pan, pour a ladleful of  batter on the centre of the pan and spread it with the back of ladle to a small round.
  5. Cook it covered in a medium flame for a minute or till it gets cooked (no need to flip). Remove the appam from the pan and repeat the same with the remaining batter.
  6. Serve hot with any spicy curry or chutney....

Ingredients:

2 glasses of cold water
8-10 mint leaves
lime juice of 1 lemon
sugar as required

Eggless Strawberry Cake


Ingredients:

1 3/4 cup all purpose flour
3/4 cup sugar
1 cup strawberry (about 14), pureed or crushed
1 tsp baking soda
1/2 cup vegetable oil
1 tsp vanilla extract
1 tbsp vinegar
a pinch of salt

Preparation:
  1. Preheat oven to 180 degree celcius. Line the cake tin with baking paper or grease it with butter and keep it aside. ( I used 2 small cake tins for baking this cake). 
  2. In a mixing bowl, add all purpose flour, sugar, baking soda and salt and mix together.
  3. In another bowl, combine pureed strawberries, vanilla extract, oil and vinegar and mix well.
  4. Add this strawberry mix (step 3) to the dry ingredients (step 2) and gently mix until combined. Do not over mix.
  5. Pour this batter to the prepared cake tin/ loaf pan and bake for 40-45 minutes or until a skewer inserted into the center of the cake comes out clean.
  6. Allow to cool completely and then cut into slices and serve...

Sesame Seed Poori/ Puri


Ingredients:

2 cups plain flour/ maida
1 tbsp black sesame seeds
1 tsp ghee
1 egg
salt
oil for frying

Preparation:
  1. Wash the sesame seeds and keep it aside.
  2. In a bowl, add plain flour, ghee, egg, sesame seeds, salt and knead well to a dough adding enough water.
  3. Divide the prepared dough into small balls and roll it into small poori's.
  4. Heat oil in a pan and fry the poori's on both sides till light golden brown. Serve hot with any curry....

Tapioca with Chicken/ Chicken Kappa


Ingredients:

1 kg tapioca, peeled and cut into pieces
250 gm chicken, cut into pieces
3 onions, chopped
1 tomato, finely chopped
1 tbsp ginger, crushed
1 tsp garlic, crushed
4 green chillies, chopped
1 tbsp coriander powder
1 tbsp chilli powder
1/2 tsp turmeric powder
1/2 tsp fennel powder
1/2 tsp garam masala
1/2 cup grated coconut
few curry leaves
salt
oil

Preparation:
  1. Cook cleaned tapioca in water, drain and keep it aside.
  2. Heat oil in a pressure cooker and saute crushed ginger and garlic.
  3. Add 2 chopped onions, green chillies and tomato and saute well.
  4. Then add coriander powder, chilli powder, turmeric powder, fennel powder, garam masala and salt and stir well for 1-2 minutes.
  5. Add cleaned chicken pieces with 2 cups of water and mix well.
  6. Add tapioca and cook covered for 3 whistles.
  7. Heat little oil in a pan and fry 1 finely chopped onion till golden brown and keep it aside.
  8. Stir fry grated coconut and curry leaves in the remaining oil in the pan.
  9. Open the cooker and thoroughly stir the contents. Add in the fried coconut and curry leaves and mix well.
  10. Transfer to a serving plate and garnish with the fried onions and serve hot...

Vendakka / Okra Ularthiyathu


Ingredients:

1/2 kg okra/vendakka
1 big onion, sliced
2 green chillies, slit
1/2 tsp turmeric powder
1 tsp red chilli flakes
salt
oil

Preparation:
  1. Chop vendakka into small pieces.
  2. Heat oil in a pan and add sliced onion, green chillies and turmeric powder and saute for 1-2 minutes.
  3. Add chilli flakes, chopped vendakka and salt and stir fry it in medium heat until it is dry and well cooked.. Remove from flame and serve with rice...

Ingredients:

1 cup chilled watermelon
1 cup chilled milk
2 tbsp sugar
1 cup ice cream (vanilla or strawberry flavour)
1 tsp rose syrup
