Pear - Banana Smoothie


Ingredients:

2 pears, peeled and seeds removed
1 small banana
1 1/2 cup milk
2-3 tbsp sugar or as required
few cashew nuts, chopped

Preparation:
  1. In a blender, add the chopped pears, chopped banana, milk and sugar and blend well.
  2. Pour it in a serving glass and garnish with chopped cashew nuts and serve....

Papaya Mezhukku


Ingredients:

1 small raw papaya
1- 1 1/2 tsp chilli powder
1/4 tsp turmeric powder
4 big garlic cloves, crushed
3 onions, chopped
1 1/2- 2 cups water
1 1/2 tbsp oil
1 tsp mustard seeds
3 dry red chillies
few curry leaves
salt

Preparation:
  1. Peel the raw papaya and slice it into thin pieces ( about 4 cups) ,wash it and keep it aside.
  2. Heat oil in a pan and splutter mustard seeds and add curry leaves and dry red chillies.
  3. Add garlic crushed and saute for a minute.
  4. Add chilli powder and turmeric powder and mix well.
  5. Add sliced papaya and mix well.  Add enough water (about 1 1/2 -2 cups) and cook covered.
  6. When it is half done, add chopped onion and salt and mix well.
  7. Cover and cook till done, stirring in between. Remove from flame and serve with rice...

Cauliflower- Green Peas Masala


Ingredients:

300 gm cauliflower florets
1/2 cup fresh green peas
1 big onion, finely chopped
1 tbsp ginger-garlic paste
1 big tomato, finely chopped
1 tbsp coriander powder
1-1 1/2 tsp kashmiri chilli powder
1/2 tsp cumin powder
1/4 tsp turmeric powder
1/4 tsp garam masala
1/4 tsp cumin seeds
3/4 cup water
salt
few coriander leaves
oil

Preparation:
  1. Clean the cauliflower florets and shallow fry it in 2 tbsp oil till golden brown and keep it aside.
  2. Heat little oil in a pan and splutter cumin seeds.
  3. Add chopped onions and saute well till transparent. Add ginger-garlic paste and fry for 2 minutes in medium flame.
  4. Add kashmiri chilli powder, coriander powder, cumin powder, turmeric powder and garam masala and saute for 2-3 minutes in  medium flame.
  5. Add chopped tomato and salt and saute well till it becomes soft and mushy.
  6. Add cauliflower florets and green peas and mix it well for 2 minutes.
  7. Then add water and mix well and cook covered in medium flame until cauliflower and green peas are cooked. 
  8. Add chopped coriander leaves and serve hot......

Melting Moments Cookies

Ingredients:

3/4 cup (100 gm) plain flour
2 tbsp corn flour
1/2 cup icing sugar
1/2 cup (100 gm) butter
1 tsp vanilla extract
2 tbsp milk, if required

Preparation:
  1. Preheat oven to 180 degree celcius. Line a baking sheet with baking paper.
  2. In a bowl, sift together plain flour and corn flour and keep it aside.
  3. In another bowl, mix butter and icing sugar together and blend well until smooth and creamy using hand blender or a wire whisk.
  4. Add the flour mixture and vanilla extract and mix until smooth without any lumps. Add little milk if the dough is stiff.
  5. Transfer this to a piping bag fitted with a star nozzle and pipe into rosettes on the prepared baking sheet or make small balls and flatten lightly with your palms and bake.
  6. Bake for about 12-15 minutes or until the cookies turn golden brown at the edges...

Corn Puttu


Ingredients:

2 cups corn puttupodi ( I used double horse corn puttupodi)
1 cup grated coconut
Water as required
salt

Preparation:
  1. Mix the salt in water and add this water little by little to the corn puttupodi till it becomes wet/ moist and mix thoroughly without any lumps.
  2. Take a puttu maker and layer it with grated coconut first, then the puttupodi and then the grated coconut again. Repeat the process till the puttu maker is filled.
  3. Fill pressure cooker/ puttu kudam with 2-3 cups of water and bring to a boil.
  4. Place the puttu maker on top of it and steam cook for 5-7 minutes or until the steam starts coming out from the top of puttu maker. 
  5. Remove it to a plate and serve hot...

Carrot- Muringayila/ Drumstick Leaves Thoran


Ingredients:

2 carrots, grated
1 cup drumstick leaves
2 green chillies, chopped
1/4 cup grated coconut
1 small onion, finely chopped
1/2 tsp mustard seeds
2 dry red chillies
salt
oil

Preparation:
  1. Remove the drumstick leaves from the stems and wash thoroughly...
  2. In a bowl, add grated carrots, drumstick leaves, grated coconut, chopped green chillies, chopped onion and salt and mix well.
  3. Heat little oil in a pan, splutter mustard seeds and add dry red chiilies.
  4. Add carrot- drumstick leaves mixture and stir well.
  5. Cover and cook on low heat till done, stirring occasionally. Remove from flame and serve with rice...

Tomato Masala Fish Fry


Ingredients:

4-5 medium size fish pieces
1 1/2-2 tsp kashmiri chilli powder
1/4 tsp turmeric powder
1 medium tomato
2 garlic cloves
4-5 curry leaves
salt
oil

Preparation:
  1. Marinate cleaned fish pieces with chilli powder, turmeric powder and salt adding little water and keep it aside for 10 minutes.
  2. Grind tomato, garlic and curry leaves together to a paste.
  3. Heat oil in a pan and fry the marinated fish pieces on both sides and keep it aside.
  4. In the same oil used for frying fish, add the ground tomato paste and saute for 1-2 minutes on medium flame.
  5. Then add the fried fish and mix well till the fishes are well coated with masala. Remove from flame and serve hot...

Papaya Moru Curry


Ingredients:

1 1/2 cups raw papaya, chopped
1 cup grated coconut
1 cup yoghurt
1/2 tsp turmeric powder
1/2 tsp chilli powder
2 green chillies
1/2 tsp cumin seeds
2 shallots
1/2 tsp mustard seeds
1/4 tsp fenugreek seeds
2-3 dry red chillies
few curry leaves
salt
oil

Preparation:
  1. Peel and chop raw papaya into small pieces.
  2. Grind grated coconut, shallots, cumin seeds, green chillies and little turmeric powder to a thick paste and keep it aside.
  3. Cook chopped papaya with chilli powder, 1/4 tsp turmeric powder, 3-4 curry leaves and salt adding little water in a pressure cooker for 1-2 whistles.
  4. Add ground paste and yoghurt , mix well and heat on low flame for few minutes. Don't allow to boil.
  5. Heat little oil in a pan and splutter mustard seeds and fenugreek seeds.
  6. Add dry red chillies and curry leaves and saute.
  7. Pour this seasoning over the curry and close with a lid...Serve with rice..

Rava- Maida Neypathal/ Poori


Ingredients:

1 cup maida/ plain flour
1/2 cup rava/ semolina
1/2-3/4 cup grated coconut
2 shallots
1/2 tsp fennel seeds
1/2 cup water
salt
oil for frying

Preparation:
  1. In a bowl, mix maida and rava together.
  2. Grind grated coconut, shallots, fennel seeds, salt and water together to a coarse paste.
  3. Mix this ground paste with rava-maida mixture and knead well to a dough.
  4. Divide the prepared dough into small balls and roll it into small poori's.
  5. Heat oil in a pan and fry the poori's on both sides. Serve hot with curry...

Tutti Frutti Butterfly Cake



 Hi friends and readers,

            Hope everyone is doing well.. I am back..Had to take a small break for my delivery..Alhamdulillah we have been blessed with a baby boy, Shayaan, born on February 20th. So now I am a busy mom of 3 kids :) .. I have got many recipes in my drafts, InshaAllah I will try to post them on coming days...
               Today is my daughter, Safa's 7th birthday..She wants a butterfly cake, so I made this Tutti Frutti Butterfly Cake for her with the help of my two little girls..

Eggless Tutti Frutti Cake:

Ingredients:

1 1/2 cups all purpose flour
3/4 cup sugar, powdered
1 cup yoghurt or curd, beaten
1/2 cup oil
1/4 cup tutti frutti
1 1/4 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp vanilla essence
a pinch of salt

Preparation:
  1. Preheat the oven at 180 degree celcius..Grease and flour 8" round baking pan and keep it aside. (Here I used a round pan and a small rectangular pan)..
  2. In a large bowl, beat yoghurt until smooth. Add sugar to it and beat again for 2-3 minutes.
  3. Add baking powder and baking soda to the yoghurt mixture and mix well. Keep it aside for 2-3 minutes till it becomes frothy.
  4. Add vanilla essence and oil and mix it nicely and gently and make sure that the air in the mixture is not lost.
  5. Add the flour in two batches and gently fold the flour into the mixture until you get smooth dropping consistency.
  6. Mix tutti frutti with 1 tsp of flour in a small bowl. Add this tutti frutti to the cake batter and fold it nicely.
  7. Pour this batter to the prepared tin and bake it for 30-40 minutes or until a toothpick inserted comes out clean.
  8. Remove the tin from the oven and cool completely on a wire rack..
How to make a Butterfly Cake:
     
         For making butterfly cake, I followed the steps used here..
  1. Make a round cake and a rectangular cake.
  2. Cut the round cake into half.

    3. Trim the rectangular cake.


     4. Place the pieces together and trim small triangles on both sides.

     5. After the cake pieces are assembled, trim the edges to make them look curved...
     6. For frosting, I used Buttercream Icing and decorated with Smarties and sugar sprinkles...



   7. Cut the cake into thick slices and serve...
