Coconut Chutney


Ingredients:

1 cup grated coconut
1-2 green chillies
1/2 inch ginger, chopped
1 shallot
small piece tamarind
1/2 tsp mustard seeds
1 sprig curry leaves
2 dry red chillies
2 tsp oil
salt to taste

Preparation:
  1. Grind grated coconut, green chillies, ginger, shallot, tamarind and salt together to a smooth paste adding little water. Transfer it into a serving bowl and keep it aside.
  2. Heat oil in a small pan and splutter mustard seeds. Add dry red chillies and curry leaves.
  3. Pour the seasoning over the chutney,mix well and serve with idli/ dosa.....

Strawberry Pancake


Ingredients:

1 cup plain flour/ all purpose flour
1/2 cup strawberries, chopped
1/4 cup yoghurt
1 1/2-2 tbsp sugar
1 tsp baking powder
a pinch of baking soda
1/4 tsp salt
1 tbsp oil
3/4-1 cup milk
butter/ cooking spray

Preparation:
  1. In a bowl, whisk together plain flour,baking powder and baking soda.
  2. In another bowl, add the yoghurt and beat well. Add sugar and salt and mix well until dissolved.
  3. Then add the oil and mix well.
  4. Add the flour mixture and milk alternatively and mix well using a whisk without any lumps and keep it aside for 10-15 minutes.
  5. Heat a frying pan or griddle over medium heat and lightly brush the pan with melted butter or oil or cooking spray.
  6. Using a small ladle or scoop, pour about 1/4 cup pancake batter onto the hot pan and evenly sprinkle chopped strawberries on top.
  7. When the bottom of the pancake is golden brown and bubbles starts to appear on the uncooked top surface of the pancake, turn over. Cook until golden brown for about 2-3 minutes.
  8. Repeat with remaining batter, brushing the pan with melted butter or oil.
  9. Transfer to a plate and serve warm with maple syrup or honey....

Papaya - Green Gram / Cherupayar Thoran


Ingredients:

2 cup raw papaya, grated
1/4 cup green gram/ cherupayar
1/2 cup grated coconut
1/2 tsp turmeric powder
4 shallots
1 garlic clove
3-4 green chillies
1/2 tsp mustard seeds
1/4 tsp cumin seeds
1 sprig curry leaves
salt to taste
2 tbsp oil

Preparation:
  1. Soak green gram/ cherupayar in water and pressure cook it adding enough water and salt and keep it aside.
  2. Crush grated coconut, turmeric powder, shallots, garlic clove and green chillies together.
  3. Heat oil in a pan and splutter mustard seeds and cumin seeds.
  4. Add curry leaves, grated papaya and salt and mix well and cook covered in low flame for 4-5 minutes, stirring occasionally.
  5. Then add cooked cherupayar and crushed coconut mixture, mix well and cook for 2-3 minutes.
  6. Remove from flame and serve with rice...

Apple Cinnamon Milkshake



Ingredients:

1 cup apple, peeled and chopped
2 cups chilled milk
2 tbsp sugar or to taste
1 tsp cinnamon powder

Preparation:
  1. In a blender, add the chopped apples and sugar and blend well until smooth adding little milk.
  2. Then add the cinnamon powder and remaining milk and blend again.
  3. Pour the milkshakes into serving glasses and serve immediately.....

Dry Beef Chilli


Ingredients:

1/2 kg beef, cut into small pieces
2 onions, chopped
1 tbsp ginger paste/ finely chopped
1 tbsp garlic paste/ finely chopped
3-4 green chillies, chopped
2 tsp pepper powder
1 tsp turmeric powder
1 1/4 tsp chilli powder
2 tsp coriander powder
1 tsp garam masala
1 1/2 tbsp soy sauce
1 tbsp tomato sauce
2 tsp chilli sauce
few curry leaves
salt to taste
2 tbsp oil

Preparation:
  1. Clean the beef pieces and marinate it with 1 tsp ginger paste, 1 tsp garlic paste, 1/4 tsp chilli powder, 1/4 tsp turmeric powder, 1/2 tsp pepper powder and salt. 
  2. Pressure cook the marinated beef without adding water till cooked and all the water dries up.
  3. Heat oil in a pan, add chopped onions, green chillies, ginger and garlic and saute well.
  4. Add chilli powder, coriander powder, turmeric powder, garam masala, curry leaves and salt and mix well for 2 minutes.
  5. Then add cooked beef , remaining pepper powder, tomato sauce, soy sauce and chilli sauce and mix well till masala is well coated with the beef.
  6. Switch off the flame and transfer to a serving plate..Serve hot...

Sprouted Green Gram / Mulappicha Cherupayar Puttu


                Today's recipe is a healthy and nutritious puttu prepared by using sprouted green grams...

Ingredients:

1 cup sprouted green gram/ mulappicha cherupayar
1/4 tsp turmeric powder
2 cup puttu podi
1 cup grated coconut
salt

Preparation:
  1. Cook sprouted green gram adding turmeric powder and salt for 2-3 minutes and keep it aside.
  2. Mix little salt in water and add this water little by little to the puttupodi till it becomes wet/ moist and mix thoroughly without any lumps. 
  3. To prepare puttu, take a puttu maker and layer it with 1 tbsp grated coconut first, then 2-3 tbsp sprouted green gram and then the puttupodi as the third layer. Repeat the process, till the puttu maker is filled.
  4. Fill pressure cooker/ puttu kudam with 2-3 cups of water and bring to a boil.
  5. Place the puttu maker on top of it and steam cook for 5-7 minutes or until the steam starts coming out from the top of puttu maker. 
  6. Transfer the prepared healthy puttu in a plate and serve hot..

Carrot Pachadi


Ingredients:

2 cups carrots, grated
2 green chillies, finely chopped
1 cup yoghurt
1/4 tsp cumin powder
1 cup water
1/2 cup thick coconut milk
1/2 tsp sugar
1 tbsp coriander leaves, finely chopped
salt to taste
1/2 tsp mustard seeds
2 dry red chillies
curry leaves
2 tsp oil

Preparation:
  1. In a pan, add grated carrots and cook it adding green chillies, cumin powder, salt and water.
  2. Add coconut milk to cooked carrots and mix well. When it starts to boil, switch off the flame.
  3. Then add beaten yoghurt , sugar and chopped coriander leaves and mix well. Check for salt.
  4. Heat oil in a pan and splutter mustard seeds. Add dry red chillies and curry leaves and pour this seasoning over the pachadi...Serve with rice...

Uluvayila Meen Curry / Fenugreek Leaves Fish Curry


Ingredients:

1/2 kg fish
1 cup fenugreek leaves/ uluvayila, chopped
1 tbsp chilli powder
2 tbsp coriander powder
1/2 tsp turmeric powder
1 onion, thinly sliced
1" piece ginger, finely chopped
3 green chillies, slit
2 sprig curry leaves
3-4 kudampuli/ gambooge
1 cup thick coconut milk
2 cup thin coconut milk
1 tsp mustard seeds
3 tbsp oil
salt to taste

Preparation:
  1. Clean and cut the fish into pieces and keep it aside.
  2. Soak kudampuli in 1/2 cup of water.
  3. Grind chilli powder, coriander powder and turmeric powder together to a smooth paste adding little water.
  4. Heat oil in a pan and splutter mustard seeds.
  5. Add sliced onion, ginger, green chillies and curry leaves and saute well.
  6. Add ground masala paste and saute well.
  7. Add kudampuli along with the water, cleaned fish pieces , thin coconut milk and salt and cook covered in medium flame.
  8. When the gravy thickens, add the thick coconut milk and chopped fenugreek leaves and boil for about 3-4 minutes on low flame. Remove from flame and serve hot.....

Cashew and Chicken Salad


Ingredients:

2 cup boneless chicken, cut into small cubes
1/2 cup cashew nuts
1/2 cup apple, cubed
1/2 cup cucumber, cubed
1/2 tsp sugar
1/2 - 1 tsp pepper powder
1/2 cup mayonnaise
few coriander leaves, chopped
salt

Preparation:
  1. Cook chicken pieces with little pepper powder and salt adding water.
  2. In a bowl, add the cooked chicken cubes, chopped apple, cucumber, cashew nuts, little pepper powder, sugar and salt and mix well.
  3. Then add mayonnaise and mix well.
  4. Keep refrigerated till ready to serve...Garnish with coriander leaves and serve...

Banana Almond / Badam Milkshake


Ingredients:

1 cup badam / almonds
2 ripe bananas
3 cup chilledmilk
3 tbsp sugar or honey
1/2 tsp vanilla extract (optional)

Paneer Shahi Korma / Kurma


Ingredients:

300- 400 gm paneer, cut into cubes
1 1/4-1 1/2 cup milk
3/4 cup cream
2 medium onion, finely chopped
1 big green chilly, chopped
1 tsp chilli powder
1/2 tsp turmeric powder
1 piece cinnamon
5 cardamom
1/4 tsp kasri methi
coriander leaves, chopped
salt to taste
1 1/2 tbsp butter

Preparation:
  1. Heat butter in a pan and add crushed cardamom and cinnamon.
  2. Add chopped onions and green chilly and saute well till light brown.
  3. Add turmeric powder and chilli powder and stir well.
  4. Reduce the flame and add cream and milk and mix well.
  5. Add cubed paneer and salt and stir gently. Boil for 5 minutes till the gravy becomes thick.
  6. Add kasuri methi and mix well. Add fresh coriander leaves, mix well and remove from flame.
  7. Garnish with coriander leaves and serve...

Chembu / Taro Chips


Ingredients:

1/2 kg taro / chembu / colocasia
salt water (1-2 tsp salt in 1/4 cup of water)
oil for frying

Preparation:
  1. Peel off the outer skin of taro roots and wash properly.
  2. Cut the taro into thin round slices..
  3. Heat oil in a deep pan on medium heat and fry the sliced taro.
  4. When the chips are almost done, reduce the heat and sprinkle little salt water into the oil carefully. 
  5. Then fry for another 1-2 minutes until it becomes light brown and crispy.
  6. Drain them on a paper towel and let it cool. 
  7. Repeat the same process with rest of the sliced taro...Store in an air tight container...

Chicken Coconut Soup


Ingredients:

1/4 cup chicken, cooked and shredded
1/2 tsp ginger, finely chopped
1/2 tsp garlic, finely chopped
1 green chilli, finely chopped
1 tbsp celery, finely chopped
1 1/2 cup chicken stock
1/2 - 1 tsp pepper powder
2-3 tbsp coconut milk
1 tbsp spring onion, chopped
1/4 tsp star anise powder
grated coconut, for garnishing
salt to taste
1 tbsp oil/ butter

Preparation:
  1. Cook chicken with 2 cups of water adding little pepper powder and salt. Shred the chicken pieces and keep it aside.
  2. Heat butter/ oil in a pan and add finely chopped ginger, garlic, celery, green chilli and saute well.
  3. Add shredded chicken, chicken stock, 1/4 tsp pepper powder and salt and bring to a boil.
  4. Add pinch of star anise powder, chopped spring onion and boil well.
  5. Then add coconut milk and mix well for a minute and switch off the flame. Adjust salt and pepper powder...
  6. Transfer to a serving bowl and garnish with pinch of star anise powder, pepper powder and grated coconut....Serve hot...

Fried Chicken Pulao/ Pulav


Ingredients:

1 kg chicken
3 cups basmati rice
3 onions, thinly sliced
2 tomatoes, chopped
1 tbsp ginger paste
1 tbsp garlic paste
5-6 green chillies, crushed
2 tsp coriander powder
3/4 tsp garam masala
3/4 tsp chicken masala
3/4 tsp turmeric powder
1 tbsp chilli powder
1 tbsp yoghurt
5 cloves
4 cardamoms
2 inch cinnamon stick
2 star anise
1 bay leaf
coriander leaves, chopped
salt
oil

Preparation:
  1. Clean and cut the chicken into pieces and marinate it with chilli powder, 1/4 tsp turmeric powder, yoghurt and salt. Keep it aside for 1 hour.
  2. Wash and drain the rice and keep it aside.
  3. Heat oil in a pan and fry the marinated chicken pieces and keep it aside.
  4. Heat a large pan and add 2-3 tbsp oil and add cloves, cinnamon, cardamoms, star anise and bay leaf.
  5. Add sliced onions and saute well till onion turns transparent.
  6. Add ginger, garlic and green chillies paste and saute well for 2 minutes.
  7. Add chopped tomatoes and saute well till soft.
  8. Then add coriander powder, 1/2 tsp turmeric powder, garam masala, chicken masala and salt and saute for 2-3 minutes.
  9. Add fried chicken pieces and mix well.
  10. Add drained rice and stir well. Add 6 cups of boiling water, salt and coriander leaves and mix well.
  11. Cover and cook on medium flame till it is done. Switch off and keep uncovered for about 5 minutes.
  12. Garnish with coriander leaves and serve with raita...

Chemmeen - Kovakka / Prawns - Ivy Gourd Thoran


Ingredients:

250 gm prawns, cleaned
15 kovakka/ ivy gourd, chopped
1 cup grated coconut
1 onion, chopped
3-4 green chillies, chopped
2 garlic cloves, crushed
1 tsp chilli powder
1/2 tsp turmeric powder
1/2 tsp mustard seeds
few curry leaves
oil
salt

Preparation:
  1. Cook cleaned prawns with chilli powder, 1/4 tsp turmeric powder and salt adding enough water till done. Keep it aside.
  2. Heat oil in a pan and splutter mustard seeds and add curry leaves.
  3. Add crushed garlic, chopped onion and green chillies and saute well.
  4. Add chopped kovakka, 1/4 tsp turmeric powder and salt and mix well.
  5. Sprinkle 1-2 tbsp water and cook covered in low flame till done, stirring occasionally.
  6. Then add cooked prawns and mix well.
  7. Add grated coconut, mix well and cook for 2-3 minutes on low flame. Remove from flame and serve with rice...

Mutta / Egg Puttu


Ingredients:

1 1/2 cup puttu podi
3/4 cup grated coconut
4 eggs
1 medium onion, chopped
1 medium tomato, chopped
1/2 tsp ginger-garlic paste
few curry leaves, chopped
1/2 tsp chilli powder
3/4-1 tsp coriander powder
1/4 tsp turmeric powder
1/2 tsp garam masala
1/4-1/2 tsp pepper powder
salt
oil

Preparation:
  1. In a bowl, beat the eggs adding little pepper powder and salt.
  2. Heat 1 tsp oil in a pan, add the beaten eggs and scramble them. Transfer to a plate and keep it aside.
  3. Heat oil in the same pan, add chopped onion, ginger-garlic paste and curry leaves and saute well until onion turns transparent.
  4. Add chilli powder, coriander powder, turmeric powder and garam masala and mix well for 1-2 minutes.
  5. Add chopped tomato and salt and saute well until tomato turns soft.
  6. Then add scrambled eggs , mix well and cook for 1-2 minutes. Remove from flame and keep it aside.
  7. In a bowl, mix puttupodi and salt to taste. Add water little by little to this puttupodi till it becomes wet/ moist and mix thoroughly without any lumps. 
  8. To prepare puttu, take a puttu maker and layer it with 1 tbsp grated coconut first, then 3 tbsp egg masala mixture and then the puttupodi as the third layer. Repeat the process, till the puttu maker is filled and the last layer with grated coconut. 
  9. Fill pressure cooker/ puttu kudam with 3-4 cups of water and bring to a boil.
  10. Place the puttu maker on top of it and steam cook for 5-7 minutes or until the steam starts coming out from the top of puttu maker. Remove it to a plate and serve hot...

Green Apple - Cucumber Raita



Ingredients:

1 small green apple, cut into small cubes
1/2 cucumber, peeled and cubed
1 small onion, cut into small cubes
1 small tomato, seeds removed and chopped
1 green chilly, finely chopped
1 - 1 1/2 cup beaten yoghurt
few coriander leaves, chopped
salt to taste

Preparation:
  1. In a large mixing bowl, add chopped green apple, cucumber, onion, tomato, green chilly and coriander leaves and mix together.
  2. Add yoghurt and salt to this and mix well. Serve with biriyani, pulao etc...

Chocolate Chip Cookies


Ingredients:

1 1/3 cup plain flour/ all purpose flour
1/2 tsp baking soda
1/4 tsp salt
1/2 cup unsalted butter, softened
1/2 cup light brown sugar
1/2 cup white sugar
1 egg
1 tsp vanilla extract
1 cup chocolate chips

Preparation:
  1. Preheat oven to 180 degree celcius. Line a baking sheet with baking paper/ parchment paper.
  2. In a bowl, sift together all purpose flour, baking soda and salt and keep it aside.
  3. In a large mixing bowl, cream together butter and sugars until light and fluffy.
  4. Add egg and vanilla extract and mix well until combined.
  5. Then add the flour mixture to the creamed mixture and mix gently, just until combined. Do not over mix.
  6. Gently fold in the chocolate chips.
  7. Drop a tablespoon of cookie batter on to the prepared baking sheet, two inches apart.
  8. Bake for about 12-15 minutes or until the edges turn golden brown.
  9. Remove from the oven and allow to cool for about 10 minutes on the baking sheet.
  10. Transfer them to a wire rack to cool completely..........
